Process & Profile

High West has launched its second Bottled-in-Bond release—a 100% in-house bourbon from its Wanship, Utah facility. Adhering to the 1897 Bottled-in-Bond Act, this bourbon is distilled in a single season by one distiller, aged at least four years, and bottled at 100 proof in a federally bonded warehouse. Crafted from a mash bill of 64% non-GMO Colorado yellow corn and 36% Idaho rye grown with sustainable, carbon-conscious practices, it’s fermented using three distinct yeast strains, including the rare S. diastaticus, to enhance aroma complexity. Aged at an altitude of ~4,000 feet, the result is a high-rye expression rich in aromatic depth.

Tasting Notes

  • Nose: Honeycrisp apple, wildflower honey, graham cracker crust, and malted milk chocolate with toasted oak spice.

  • Palate: Layers of peach and cherry cobbler, gingersnaps, roasted marshmallows, puffed wheat cereal, cocoa nibs, molasses, dried thyme, and charred barrel staves.

  • Finish: Long with nuanced almond browning and brown butter warmth.
